Ingredients

My favourite Hot Cross Buns: dough

  • 250 g Milk
  • 1 tbsp Dried yeast, or 40g fresh
  • 60 g brown sugar
  • 60 g unsalted butter
  • 1 egg
  • 500 g Baker's Flour, Or you can use plain flour but better results are obtained with baker's flour
  • 1/2 tsp salt
  • 1 tsp bread improver
  • 1 tsp Diastatic malt, Optional
  • 1 tsp mixed spice
  • pinch Cardamon, ground
  • 75 g sultanas
  • 75 g currants, Or just 150g sultanas
  • Grated zest of 1 orange

Paste

  • 4 tablespoons plain flour
  • 4-5 tablespoons water

Glaze

  • 50 g apricot jam

Recipe's preparation

    How to:
  1. 1.Combine the milk,yeast (fresh or dried) and brown sugar into the Closed lid"Closed lid" , 3mins/37°C/sp3. Leave to stand in the bowl for 5 minutes.

    2. Add the butter, egg, baker's flour, salt, bread improver, diastatic malt, mixed spice, and cardamon.

    3. Knead Dough mode"Dough mode" 3 minutes, then add the mixed fruit, zest and knead Dough mode"Dough mode" again/3minutes.

    4. Tip into a greased bowl, cover with cling wrap and leave to double, up to 1 hour.

    5. Tip the dough onto a floured surface, punch down and shape into 12 rolls.

    6. Place onto a lined tray, cover with a clean t-towel and leave to rise for around 30mins or until double.

    7. Meanwhile preheat the oven to 190°C/ 170 FF.

    8. Pipe crosses over the buns

    9. Bake for 20-25 minutes until golden and cooked.

    10. Brush glaze over the hot buns.

    Paste:

    Blend together the flour and water until you get a smooth piping type paste. Adjust flour and water where necessary. Pipe crosses over the buns.

    Glaze:

    Melt the jam in the microwave.
