Ingredients

  • 180 grams raw sugar
  • 2 eggs
  • 130 grams plain flour
  • 1 tsp bicarbonate soda
  • 1 tsp baking powder
  • 1 tsp vanilla sugar, homemade
  • 1 tsp cinnamon ground
  • 1 tsp vegetable oil of choice
  • 300 grams carrot

Recipe's preparation

  1. Roughly chop carrots (no need to peel) and chop for 20 sec on 9. Set aside.

    2. Put eggs and sugar into TM bowl and beat on 8 for about 30 sec, or until pale and fluffy (you can use the butterfly, but it's not necessary).

    3. Add the remaining ingredients, except carrot, and mix for 10 sec on 6.

    4. Add the carrots and mix in gently Counter-clockwise operation"Counter-clockwise operation" on 2 until carrot is incorporated.

    5. Pour into a lightly oiled round cake tin (ca. 20 cm diameter) and let bake for ca. 40 min on 176 degrees C.

    Dust cake with icing sugar once cooled and serve with a spoon of fruit yoghurt of your choice.

Tip

This cake will only set you back around 80 kcal per slice and its full of good vitamins and nutrients! tmrc_emoticons.-)

The carrot cake keeps really moist for days and can be frozen.

    Great easy cake! Used 130gms of Monk Fruit sugar and 30gms of lsa! So good!

    Yummy! Made this in double batches at my husbands request for his 40th. Worked well in the TM5. I only used half the amount of cinnamon and used vanilla extract rather than a vanilla sugar. Just cook it a bit longer until a skewer comes out clean. Got rave reviews from my family...like a carrot mud cake! I did two double batches in a larger round pan (28cm) with cream cheese icing in between and covering the lot.

    Made this yesterday.  All gone.  Yummy.  Made it gluten free by milling almonds to make 130 grams almond flour tasted great but needed more cooking time with the almond meal.  Thumbs up from my family.

    That's fab, Sue! I make this so often, I know it by heart, so I don't look in here very often. tmrc_emoticons.;) I sometimes reduce sugar or replace by homemade jam or fresh berries, which makes a nice variation. Glad you like it though!

    Made this today and it's gone already. Reduced sugar to 100g and it was still sweet enough. My son is now making another one for lunches tomorrow.
