Ingredients

Orange cake ( low sugar, moist)

Cake

  • 1 orange ( large), Zest & juice
  • 150 g --- Butter, 150 gram
  • 160g SR flour, 160 sifted
  • 90g Natvia & white sugar, 90 gram (mostly Natvia/2 tab of white sugar)
  • 3 eggs, Large eggs
  • vanilla essence, Couple drops

Recipe's preparation

    Thermomix
  1. Preheat oven to 170.
    small loaf tin ( I use silicone) grease if metal
    Peel a large orange
    put peeling in bowl
    5 sec, speed 10

    empty into a container
    measure butter, melt

    1min 30, 100 degrees, speed 2

    empty melted butter into a container for cooling

    Room temperature eggs crack into bowl
    Add the sugar
    mix for 10 secs, speed 5

    Add zest & juice & vanilla ( juice equates to 1/2 cup)to bowl.Add melted butter.
    Mix 4 seconds, speed 5

    Add sifted flour to bowl
    mix 8 seconds, speed 6

    check & scrape down bowl ( lots of liquid in bowl- thin batter).
    Mix for another 4 seconds, speed 5

    Pour mixture into your small loaf tin
    ( mixture is very liquid)
    Bake in centre of oven for 30- 40 mins ( check after 30)


    when cool
    Spread cake with lemon icing- 1/2 lemon with 1/2 cup of icing ( see how thick/runny) adjust.
