- 80 g oil, olive, extra virgin, Or oil of choice
- 250 g milk, rice
- 2 eggs
- juice of 1 orange
- Zest of 1 orange
- 100 g Sugar, white
- 240 g flour, self-raising
- 1 level tbsp poppy seed

Preheat oven to 200.
Place orange rind in tmx bowl and mix 10 seconds, speed 9 (I prefer to grate with a fine grater, as it is smaller pieces of rind than the tmx can do).
Place olive oil, milk, eggs and juice from one orange into bowl. Mix speed 4, 20 seconds.
Add sugar, flour and poppyseeds mix reverse, speed 4, 3 seconds.
The mixture will will be quite runny, but it makes a delicious muffin. Pour into muffin cases.
Bake for 15-20 minutes, this will vary depending on your oven.
Tip
I used oat milk, but any milk would work fine.
I make a mix of standard and mini muffins for freezer and lunchbox.

Great recipe thanks was a hit with friends and family 🙏🏻 few tweaks on my side:
1. Used the whole orange and blitzed it with Passionfruit pulp (2 Passionfruit)
2. Used Plain Gluten Free Flour & Baking Powder
3. Used Coconut Sugar
4. Used Chia seeds instead of Poppy (as we didn't have any poppy).
5. Used regular milk, again didn't have rice milk.
These muffins are devine. Wee tip - I just cut the orange in 1/4's and put the whole thing in. Still came out delicious
These are so good I made them today for my 1 and 3 year old as a snack and they had 3 each straight away. I used canola oil instead of olive oil and the rice milk. I used a 24 hole 'mini' muffin pan and still had some batter left, so did a second batch! I got about 36 in total and have frozen most of them for the kids.
