Quick mix butter cake
- 200 g self-raising flour
- 180 g sugar
- pinch of salt
- 60 g Butter
- 2 eggs
- 3/4 cup cream, Approximately
- Small amount of melted butter, For brushing
- cinnamon sugar, For dusting

- Preheat the oven to 180°C
**grease a 20cm round tin and with baking paper.**
Blend the flour, sugar and salt 15secs/sp5
Melt the butter in a separate bowl in the microwave.
Break the eggs into a measuring cup and fill with cream to 1 cup measure.
Pour liquid ingredients into the dry ingredients and combine 45secs/sp4-5
Place mixture into the prepared tin and bake for half an hour or until a skewer inserted into the centre of the cake comes out clean.
Optional: brush with melted butter and sprinkle with cinnamon sugar while hot from the oven.
Notes
This is a great base recipe - delicious as is, or perfect for turning into more elaborate birthday cakes and cupcakes.

Tip
This is our very favourite butter cake!
It's delicious split through the middle and layered with jam and cream.
Make sure you grease and line the pan. It sticks to the pan like glue if you don't do this.
