Ingredients
Base
- 120 g unsalted butter, diced
- 60 g Dark Chocolate Melts
- 200 g castor sugar, pre-milled from raw
- 2 eggs
- 1 tsp vanilla extract
- 1 1/2 tsp natural red food colouring
- 1/4 tsp salt
- 100 g plain flour (or Baker's Flour)
Cheesecake topping
- 250 g cream cheese
- 70 g castor sugar, pre-milled from raw
- 1 egg
- 1/2 tsp vanilla extract

Preheat oven to 170-180°c.
Prepare a lamington tin with baking paper in the base and extending up the sides (this will make it easier to lift out the brownie when it cools).
Place dark chocolate buttons and butter into mixing bowl and melt 5 min/50°C/speed 1 until melted and smooth.
Add 200g sugar, vanilla, colouring and eggs and mix 5 sec/speed 4.
Add flour and salt and mix 5 sec/speed 4 until flour is just incorporated.
Pour into prepared lamington tin and spread across base.
Then lick spatula, hiding in pantry to do so if you have small children watching who may want to share.
Place cream cheese, remaining sugar, egg and vanilla inot mixing bowl and mix 1 min/speed 4.
Spoon mixture onto top of base in 6 or so big dollops.
Swirl cheesecake topping across the base with a knife or your spatula tip.
Cook for 30 minutes or until cheesecake topping is set.
Allow to cool in tin completely before removing.

Try doubling for tm5, and cut back a tad on sugar..but was yummy MUST OF BEEN munchkins & hubby devoured before I got to have a slice 😍🤗😍 thanks Nat for sharing your wonderful recipes with us xxxx
Absolutely delicious. I used left over Easter eggs for the choc and it turned out fantastically! Definitely adding to the make again (and again) list 😊
I used this for some leftover cheesecake batter I had, very soft brownie layer, but so luxe! I also dolloped on some salted caramel sauce to swirl through with the cheesecake, delish!!
Wow, such a great dessert! It was a total hit, took it to a get together, didn't even have a chance to grab a piece myself it went so quick! I drizzled melted chocolate over the top too, looks fantastic and professional, so many compliments highly recommend, it's so easy to make.
I used a 20x20cm square pan, so had to cook these for just over 50 minutes before they were ready to be taken out of the oven! It was delicious though. I didn't quite create the swirly effect very well, so perhaps I'll try to master that effect next time

Mmmmmm it was simply delicious! Sweet & decadent! Would make again for sure. Good amount of moist brownie & similiar amount of cheesecake to match. My brownie was quite crumbly & the top browned a lot (looked brown or like a thin cake from the top), so it wasn't attractive - next time I will cook for 35 mins instead of 30 mins to see if it holds together better. Would try decorating with melted chocolate - great idea from a previous post. Thanks for sharing Nat!
oh my .. made this and it is a hit with the kids.. I was also making something with melted chocolate at the time and hand left over.. so we drizzled it over the top
