Ingredients
Lemon cake
- 155 g sugar
- Rind of 1 medium lemon
- 185 g SR flour
- 1 pinch salt
- 90 g butter (soft)
- 2 eggs
- 4 tablespoon Milk
Passion fruit icing
- 90 g cream cheese
- 45 g Butter
- 150-200 g icing sugar
- pulp of 2-3 passionfruit

- Place the lemon rind (peel it off with a peeler) and sugar into the TM bowl and mix for 10 sec on speed 9. Check the to ensure the rind has been well zested; blitz it further if required.
Add the rest of he the ingredients and mix for 10 secs on speed 5 (or until just combined).
Place the mixture into a lined cake tin and bake at 180 degree C until a skewer can be removed cleanly (approx 35 min). It should still be springy in the middle. - If you don't have icing sugar, blitz some raw sugar until you have icing sugar- works just as well. Remove from TM bowl before continuing.
Add the cream cheese and butter to the TM bowl and mix for 10 secs on speed 4. Add the icing sugar and mix for approx 10 secs on speed 4 (or until combined).
Put the TM on reverse "Counter-clockwise operation" and add the passion fruit And mix for approx 5 secs on speed 3 (until combined).
* Note: sugar quantity is to taste and passion fruit is by taste and depending on how much pulp is in the fruit used. I like full sugar and passion fruit!

Tip
To create the birthday cake in the photo, I made made the cake recipe twice with one batch of icing. 25 people enjoyed small-medium squares of cake.
This is quite a lot of icing if you make one batch- I sometimes make it as a half batch.
Works well as cupcakes, just ensure you don't over cook as they can dry out.
