Ingredients
Tangy Lemon Cake with Chantilly Cream
- 125 gms butter, roughly chopped
- 100 gms castor sugar
- 1 lemon, rind removed and juiced
- 2 eggs
- 185 gms self raising flour
- 1/4 cup of milk
- Cake Topping
- 4 tablespoons of icing sugar
- 3 tablespoons of lemon juice
- Chantilly Cream
- 300 mls of whipping cream
- 1 teaspoon of vanilla essence
- 2 heaped tablespoons of icing sugar

- Preheat oven to 160 fan forced
Spray oil a bundt tin
Chantilly cream
Add cream to bowl, plus icing sugar and vanilla, whip approx 30 seconds, speed 4 - scrape out cream into a bowl and place in the fridge - no need to wash the bowl
Add lemon rind and castor sugar, chop 30 seconds speed 7
Add butter, eggs, flour, lemon juice, milk - blend 30sec speed 4
Pour batter evenly around bundt pan and smooth top bake 160 deg for approx 50-60mins or untill cooked - ie skewer comes out clean or top bounces back when pressed
To make the lemon topping
Mix the icing sugar and lemon juice and just heat for 15 seconds in the microwave
Place on a rack and prick with a skewer and drizzle the lemon and sugar topping over the cake - let it rest for 10 minutes before taking out of pan and placing on a rack
When cool serve with chantilly cream and enjoy
