- 100 g almonds
- 175 g Butter
- 195 g sugar
- 70 g flour
- 1/2 level teaspoons vanilla essence
- 6 egg whites
- 100 g raspberries, (fresh or frozen)

- Preheat the oven to 190 degrees celsius. Set the rack in the middle of the oven. Grease 12 friand moulds or muffin tins
- Place almonds into mixing bowl and mill 10 seconds, speed 10. Set Aside
- Place sugar into mixing bowl and mill 4 seconds, speed 9. Set Aside.
- Melt butter, 2 minutes, 90 degrees, speed 1.
- Place flour, icing sugar and milled almonds into bowl and mix 10 seconds, speed 4 and set aside.
- Place egg whites into bowl and beat 30 seconds, speed 4
- Add the flour, icing sugar, butter and almond mixture into the bowl, next add the vanilla essence. Combine, 20 seconds, speed 2. Scrape down sides with spatula and combine, 20 seconds, speed 2.
- Fill the greased tins 3/4 full and press the raspberries into the top of each tin, dividing evenly.
- Bake 25-30 minutes until golden brown and a skewer inserted into the centre comes out clean.
- Dust with icing sugar and serve.

Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
