Wet Ingredients
- 55 g vegetable oil
- 370 g dairy free milk, I use soy
- 1 1/2 tsp vinegar
- 1 1/2 tsp vanilla extract
Dry Ingredients
- 340 g plain flour
- 400 g caster sugar
- 1 3/4 tsp bicarb soda
- 55 g cocoa
Icing
- 175 g nuttalex or dairy free butter alternative
- 450 g icing sugar, can be made from raw sugar
- 6 tbsp cocoa
- 2 tsp vanilla extract

Add all wet ingredients to TM bowl mix 4secs/spd5
Add all dry ingredients to wet ingredients mix 8secs/spd6
Pour evenly between tins
Cook for 40 minutes and allow to cool in tins for 15 minutes until you turn them onto cooling rack
Place all icing ingredients into TM bowl and mix 6secs/spd6
Ice cake when cool
Prepare 2 x 20 cm cake tins and preheat oven to 180 degrees
Tip
This is delicious when served onto plates with the EDC berry coulis (pg 50) poured over the top.

I've made this cake several times now for a vegan work colleague. It's delicious and you can't tell it's vegan! The icing is great also!
Thank u this recipe is fantastic I've Made the cake and also cupcakes. For cupcakes it makes 32 only cooked for 15mins on 120 I also reduced the sugar to 260 still taste amazing!!
I love this cake, so easy and never fails. I consistantly find that 30 minutes in the oven is all that it needs, not 40 or it tends to be too dry

Did not do the cake recipe as there was another one on recipen community that had less ingredients but did make the buttercream icing and it was magic. Great work
