Ingredients
Walnut choc chip meringue cake
- 170g sugar raw
- 25 Jatz/Clix biscuits
- 150g walnuts
- 3 egg whites, Beaten to stiff peaks in your favourite way.
- 1 dash vanilla extract
- 1 tablespoon instant coffee, dissolved in 1T hot water
- 45g choc chips
To serve
- whipped cream
- fresh fruit e.g, blueberries, strawberries

- 1. Preheat your oven to 180°C. Grease/line a 20cm pie dish or springform pan.
2. Mill the sugar sp9/3 seconds and set aside in a large bowl.
3. (Without rising the bowl) Chop walnuts, sp6/3 secs. Transfer to the bowl with the sugar.
4. (Without rinsing the bowl) Place biscuits into the "Closed lid" and crush sp6/4 seconds.Transfer to the bowl with the walnuts and sugar. Mix it all together a bit.
5. To the large mixing bowl, ( with the sugar, nuts and biscuits) gently combine the stiffly beaten egg whites, coffee mixture and choc chips with a large spoon.
6. Spoon into the prepared pan and bake 25-35 minutes.
How to:
Tip
The best way to describe this is a cross between a cake and a biscuit. So delicious served with a dollop of cream and fresh fruit.
Feel free to leave out the coffee if making for families.
