- 85 grams pitted dates
- 90 grams raw sugar
- 1 med orange, peel left on and cut into 1/4s.
- 125 grams Butter, chopped
- 300 grams plain flour
- 1 teaspoon baking powder
- 1 teaspoon bicarb soda
- 1 egg
- 200 grams natural yoghurt
- 3 tablespoons Milk
- 1 tablespoon raw sugar, extra

Preheat your oven to 180C.
Grease and/or line 18 muffin holes.
1. Add dates and sugar to the bowl "Closed lid" and blitz sp7/15 seconds.
Set aside.
2. Add orange and chopped butter, sp7/20 seconds. Scrape.
3. Add remaining ingredients including the dates and sugar ,(but not the extra raw sugar).
4. Blend sp4.5/"Counter-clockwise operation" /10 seconds. Scrape and repeat if neccessary. Try not to overbeat.
5. Fill muffin holes 2/3 full and sprinkle lightly with the extra raw sugar.
6. Bake for 15-20 minutes or until cooked when tested.
7. Cool on a wire rack.

These are now my favourite muffins...they taste amazing..
Try them warm from the oven, split and buttered. Or warm and smothered in custard..
They also freeze well..

Perfect light fluffy muffins made in TM5. Its a keeper
I made these today were perfect. Light and fluffy muffin. I made them vegan by using an orgran egg replacer egg, coconut yogurt and nuttelex buttery and was really happy with the result. Thanks for a great recipe.
Made these at the weekend and halved the sugar. Didnt think the 7 and 4 year old would've liked them because of the lack of sugar.
They scoffed them, so a win win here

Incredibly simple, quick and easy recipe. Great flavour and texture. Used buttermilk instead of yogurt as none to hand, also reduced sugar only because I am reducing my overall sugar intake for better health. Will be making these again for sure!

Really yummy and fluffy. I reduced the sugar and omitted it from the top. I also didn't have a whole orange only freshly squeezed juice I had kept from the day before. I didn't set aside the date and sugar mixture after mixing, I just added the butter straight afterwards mixed, then added the juice. Turned out great!
I reduced the sugar by half and omitted sugar on top. DELICIOUS. This will be a regular lunch box muffin.
