Ingredients

  • 350 grams almonds
  • 300 grams zucchini, (3 small)
  • 1 tsp bicarb soda
  • 1 tsp GF baking powder
  • 1 tsp cinnamon
  • 1 tsp mixed spice
  • 80 grams brown sugar
  • 80 grams caster sugar
  • 150 grams Grapeseed Oil
  • 100 grams Cranberries
  • 100 grams walnut pieces
  • 3 eggs
  • pinch salt

Recipe's preparation

  1. Place almonds in dry TM bowl and mill for 7 seconds on speed 6.  Set aside.

  2. Cut zucchini into chunks and finely grate for 6 seconds on speed 4.


  3. Return almond meal to the TM bowl and all all other ingredients.  Mix on Counter-clockwise operation"Counter-clockwise operation" speed 3 for 10 seconds until well combined. 

  4. Pour mixture into a greased cake tin and bake for 1 hour at 160 (fan forced) or until cooked.  

Tip

This is a beautifully moist and very tasty cake to impress your guests when catering for food intolerances.  Enjoy!

    Thanks for your feedback.  I am glad you enjoyed it! My oven must be pretty effective as most things take quicker to cook than recipes suggest so that would make sense that it took longer in yours.  I guess cook until done  tmrc_emoticons.)

    I made this cake a few weeks ago after a friend made it and it was lovely. The kids left two pieces in the cake tin that I didn't know about and after 4 days I found them. Ate one... still good. Froze the other one to take to work as a snack.

    OMG. SO delicious. I took it to work frozen and by 10.30 it was good to go. I enjoyed every bite.

    Ground my ingredients for longer than recommended and left out the walnuts so my nearly 2 could also eat it. Tastes good, needed to cook for longer than the hour too.   Have you ever tried to freeze this?
