Ingredients

Zucchini & Halloumi Fritters

  • 1/4 bunch parsley
  • 1 small onion
  • 2 shallots
  • 2 Zucchinis, (approx 300g)
  • 1 cob fresh corn
  • 180 g halloumi
  • 2 eggs
  • 80 g SR Flour White or Wholemeal
  • Salt and pepper, to taste
  • oil, to shallow fry

  • 50 g SR Flour White or Wholemeal
  • Salt and pepper, to taste

Recipe's preparation

  1. Chop parsley, onion and shallots. Speed 7 / 3 seconds.  Set aside.

  2. Roughly chop zucchini. Chop speed 5 / 2 seconds until evenly grated. Place zucchini into basket and squeeze excess liquid.  

  3. Rouchly chop halloumi and add to bowl. Chop speed 5 / 4 seconds. 

  4. Chop corn kernals off the cob. Add to halloumi.

  5. Add all other ingredients to bowl including onion/parsley/shallots/zucchini. Season with salt and pepper. Mix speed 4 / Counter-clockwise operation"Counter-clockwise operation" / 10-15 seconds or until combined. Use the spatula if needed. 

  6. Add a little more flour if required to make a thick batter.

  7. Shallow fry in oil on medium heat. 3 minutes on each side or until golden brown. 

Tip

Gluten free flours can be substituted. I have used spelt or quinoa flours. Depending on the liquid content of the zucchini a little bit of extra flour may be required. Adjust accordingly.

    Super easy and yummy!
    I added a clove of garlic with the onions, used feta instead of haloumi and baby spinach instead of spring onions. Used about 100GRAMS of whole meal self raising flour. Delicious 😋

    Deceivingly good!
    I didn't have any corn so I omitted the corn. And I used 110g of SR flour. This was incredibly yummy. Passed with flying colours by two toddlers! Thank you!

    These are great! I had to add about 100g of flour even though I squeezed a lot of the juice from the zucchini. They held together nicely when cooking. Thank you

    I'm going to try with coconut flour Chocoholics Mumma  I'll try with 30 grams as that's almost 1/3 of the amount used. I'll let you know how I go.

    Loved these! We pan fry with a few drops of oil instead of shallow frying and prefer them less oily this way. Delicious!! Highly recommended!
