Pumpkin Soup
- 1100 g pumpkin
- 1 onion
- 2 cloves garlic
- 10 Kaffir lime leaves
- 20 g oil
- 2 tablespoons Massell chicken stock powder
- 100 g coconut cream
- 200 g water

Peel and rouchly chop 1.1kg pumpkin (I use Kent). Put into TM bowl and chop speed 6 / 5 seconds. Set aside.
Add onion (halved) and add garlic cloves to bowl and chop speed 6 / 3 seconds.
Add kaffir lime leaves and oil and saute Varoma / "Counter-clockwise operation" / 3 mins / speed 1.
Return pumpkin to the TM bowl. Add stock, coconut cream and water and cook 100C / "Counter-clockwise operation" / 16 minutes / speed 1. Stir with spatula halfway through to ensure kaffir lime leaves are integrating with other ingredients
Take out kaffir lime leaves (this is crucial!). Puree by slowly turning the dial from speed 1 to speed 9 / 1 minute.
Season to taste.
Tip
The kaffir lime leaves add a delicious twist to this simple pumpkin soup. Be careful to remove all kaffir lime leave as you don't want to puree these with the soup. The pumpkin is chopped first and set aside so the kaffir limes leaves can saute with the onion to release more of the flavours. This is designed to be a thicker consistency of pumpkin soup so doesn't require lots of liquid. I have made this several times and I assure you it is enough! I hope you enjoy this family favourite as much as my family and friends do!

I halved the receipe and used 2 carrots to get up to 550g. Used 150ml water, 1 teasp TM vegie Stock, 3 Kaffir Lime Leaves, 1/4teasp MF Thai seasoning, small knob of ginger and 2cm slice of chilli because we like ours to be hot. There are just the 2 of us and as we are travelling in our caravan, don't have much F&V on hand and also don't want any leftovers. It smells delicious and can't wait to taste it.
This pumpkin soup is amazing. All my friends loved it and my children gobbled it up Thanks so much, will certainly make this over and over again
