Ingredients

apple compote

  • 3 granny smiths apples, peeled and cored quartered
  • 1/2tsp cinnamon ground
  • 40g lemon juice
  • 60g sugar
  • 40g water

pastry

  • 200g plain flour
  • 40g pure icing sugar
  • 100g unsalted chilled butter, cubes
  • 70g ice cold water

topping

  • 4 braeburn apples cored, i used pink ladies
  • 1/2 juice lemon
  • 60g honey, add little boiling water to brushing consistancy
  • 20g caster sugar

Recipe's preparation

    apple compote
  1. chop apples 3secs speed 5 scrape down add cinnamon/lemon juice/water and sugar. cook 10 /100/speed 2,then cook further 10-15 mins/100 with no mc till its thick and has reduced .at this stage i processed for 10secs speed9 set aside to cool 

  2. PASTRY

    mix flour and sugar for 10secs/speed 5

    add butter process 10secs/speed 5

    add water and mix on interval speed till pastry comes together look through lid 

    wrap in thermomat and chill for 30mins

    after 30mins roll out to fit 24cm tart tin,again chill in fridge for 20mins

  3. pre heat oven 200,put a baking tray in oven,when you place tart on hot tray it will help base cook

     

    TO ASSEMBLE

    spread cooled apple compote over pastry

    cut apples thin,you really need mandolin,mix with juice of alf a lemon

     

    arrange slices over the compote start outside working your way in to centre.brush with half honey and sprinkle with caster sugar

     

    put tart onto hot baking tray and bake for 40mins until golden.brush with the last of honey allow to cool for at least 10mins before serving

    delicious, I didnt make the apple compote but added a layer of custard from the EDC instead. Loved it.
    I also used spelt flour

    Big SmileBig SmileBig SmileBig SmileBig SmileBig Smile Excellent recipe. Ultra simple to follow.
    My mistake has been to use pink lady from the beginning to the end and it wasn't that great. The tart was good but wasn't exceptionnal. So it's my fault and I will try again with a different apple next time
