Ingredients
cookies
- 10 grams chia seeds
- 20 grams water
- 170 grams peppitas (pumpkin seeds)
- 40 grams sesame seeds
- 120 grams Rice malt syrup
- 50 grams coconut flakes
- 25 grams Coconut Flour
- 1/4 teaspoon baking powder
- 5 grams vanilla essence
- 75 grams Coconut oil (liquid)
- 100 grams sultanas

Weigh chia seeds into TM bowl, and blitz for 10 seconds at speed 10. Weigh in the water, then scrape out into a clean dish and set aside to soak.
Weigh peppitas into TM bowl, then mix for 6 seconds at speed 9.
Add sesame seeds, then lock the lid and turbo for 1 second.
Add the rice malt syrup, coconut flakes, coconut flour, baking powder, vanilla amd coconut oil. Mix for 10 seconds at speed 5.
Add the chia gel mixture, and mix for 10 seconds at speed 5.
Weigh in the sulatanas, and mix on reverse, for 10 seconds at speed 3.
Using wet hands, roll into cookie size balls, and gently flatten, placing on baking paper or thermomat. Bake at 180*C for 12-15 mins.
Tip
Sulatanas can be substituted for raisins, or goji berries, or left out altogether (though my cookies went a bit flat without them).
Wrap indiviudually and freeze, ready to pull out as needed!

These are so yum!
i skipped the first step completely and just added the chia in whole with the other ingredients and they still held together perfectly.
i also used sunflower seeds instead of pepitas as I had heaps to use up, and same with golden syrup instead of rice malt.
Will make these again and again thankyou!
These cookies are delicious. I replaced the rice malt syrup with Coconut syrup (only about 20g) and a tablespoon of Xylitol (I increased the coconut oil & water to replace the liquid lost).
Also added cranberries. A very healthy snack that even my fuss pot loved

rice malt syrup is gluten free. you could also use honey, golden syrup, agave....
