Ingredients

cake

  • 50 g currants
  • 20g dark rum
  • 100g sofened butter
  • 120g Milk
  • 2tsp dried yeast
  • 40g sugar
  • 2 large eggs
  • 1/2 tsp salt
  • 300g plain flour

rum syrup

  • 1 cup sugar
  • 2/3 cup rum
  • 1/2tsp vanilla

cake glaze

  • 3/4 cup apricot jam
  • 1tbs water

Recipe's preparation

    cake dough
  1. combine currants and 20g rum in bowl and set aside

    melt a little of the butter and well grease a 5cup kugelhopf  or tube tin

     add yeast and sugar and milk to bowl  and heat 3mins/37/speed 1

    add flour/ eggs/ salt and the 80g butter left and mix on interval speed for 5mins.it is a very wet soft dough leave in jug and i put on window sill in sun and leave till it doubles took about an hour in this weather!

    add currants and mix on interval speed till combined i looked through lid about 1min

    now put into the tin its a wet sticky dough get as much out as you can thenturbo for few seconds to remove rest dough from blades ,smooth over and leave covered to prove again i did for about an dhour till it rises to top tin

    now bake in 180 pre heated oven for approx 20mins in fan forced

    leave in tin to cool for 5mins then upturn onto wire tray above a dish to catch syrup

    you then pour the rum syrup over cake use it all till its soaked 

    mix the smooth apricot jam with a little hot water and brush on cake to glaze cake,you can put jam through seive bit messy or just buy smooth jam

  3. put ingrediants into jug and heat for 3mins speed 1.5 on 80 till sugar has melted make this while cake is cooking

Tip

i filled the hole with whipped cream and added a few glace cherries

this is really an adult cake as rum has strong flavour is syrupy and delicious
