Amazing Chocolate Nut Butter
- 350 g Nuts, cold from the fridge, your choice of nuts
- 1-2 pinches salt, to taste
- 5 g cacao powder or cocoa, to taste
- 10-15 g liquid coconut oil (MCT oil)

- Weigh the cold nuts into the bowl and add salt - you can add as many and whatever type of nuts you like.
Blend speed 10 for 2 minutes, stopping at 1 minute to scrape down the bowl.
Blend until the nuts release their natural oils and start to become glossy, taste and add more salt if needed.
Weigh in the cacao powder and liquid coconut oil.
Blend for a further 30 seconds on speed 8 to incorporate the oil and cacao.
*** It is important to use the liquified coconut oil or MCT oil that doesn't solidify in the cold - you can get Coco Earth Liquid Coconut Oil with a black label or Raw C MCT Oil from most big supermarkets. ***
Store in a sterilized jar in the fridge.
Tip
I make my chocolate nut butter after I make my Amazing Nut Butter (the recipe is on here). I make the plain nut butter first then put half in a jar then add the cacao and oil to make chocolate nut butter - yum.
It is delicious served with coconut yoghurt and berries for a treat or just as good on toast.
You can sterilize your jars and lids in your Varoma! Just put 500g water in the bowl and steam your jars for 10 mins / Varoma temp / speed 2.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
