Authentic Thai Red Curry Paste
- 10 dried long red chillies, Available from good asian grocery stores
- 1/2 teaspoon salt
- 30 gram Cleaned Galangal
- 2 stalk lemongrass, White part of stem only
- 2 teaspoon Kaffir Lime Zest
- 20 gram coriander roots washed
- 1 Red Shallot, Peeled
- 5 clove garlic, Peeled
- Juice of 1 lime

1) Soak the dried chillies in a bowl of warm water for an hour. The chillies are flat and easily slit open by slicing an edge. Open the chilies flat, remove the seeds, rinse well, then leave on a paper towel to drain.
2) Add the chillies and other ingredients to the mixing bowl and chop 10 sec/speed 9. Scrape the sides of the mixing bowl with the spatula, and repeat the process if necessary till a fine paste is achieved.
3) Store the curry paste in the refrigerator for up to 2 weeks in an airtight glass cotainer with a piece of cling film pressed against the surface to reduce air exposure. Use as required.
Tip
This is the basic red curry paste from which local variations are derived. It is the essential ingredient for dry curries, especially those that are seafood based. Fantastic ingredient for Thai fish cakes.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
