Ingredients

coconut OIl

  • 80 grams coconut oil
  • 125 grams golden syrup
  • 1 portion Nutmeg
  • 2 teaspoons cinnamon
  • 1 orange zest
  • 150 grams almonds
  • 150 grams flaked almonds
  • 150 grams pumpkin seeds
  • 150 grams sunflower seeds
  • 30 grams chia seeds
  • 100 grams Shredded coconut
  • 70 grams Puffed rice
  • 300 grams sesame seeds

1/2 Cup Cranberries

1/2 Cup Sultanas

Recipe's preparation

    ThermoMix Bowl
  1. Place 1 Gound Nutmeg into Bowl and hit turbo twice until powder forms. Then add in 80g Coconut Oil,125g Golden Syrup, 2 teaspoons of cinnamon and the Zest of 1 Orange.

    Put Thermomix for 2 minutes at 100 degrees speed 1 so everything melts.

    Set aside and allow to cook slightly.

     

    Place into a seperate bowl (not Thermomix Bowl)

    150g Almonds

    150g Flaked Almonds

    150g Pumpkin Seeds

    150g Sunflower Seeds

    30g Chia Seeds

    100g Shredded Coconut

    70g Puffed Rice or Rice Bubbles

    300g Sesame Seeds

     Once the syrup has cooled pour over the mixture in the bowl and rub through with your hands ensuring that is coated with the mixture.  Spread out on a oven tray lined with baking paper and sprayed with coconut oil.   Bake for 15 min on 160 degrees halfway through cooking take out and turn the muesli over so the bottom can also brown. Just watch the muesli as it does burn very quickly depending on your oven will depend on the time. 

    Once cooled add in 1/2 cup of sultanas and cranberries.

    I eat this with coconut yoghurt, half a banana and rice milk its a great start to the day and keeps you full until lunchtime.

     

     

     

Tip

This recipe would last me about 1 month as I have a cup a day. But depending the portion size will depend how long it lasts. I store in the cupboard in a Tupperware Container.
