Ingredients

Peanut crunch protein bites

  • 60 g buckwheat raw
  • 200 g Boiling water
  • 50 g pitted prunes, Or dates
  • 25 g dessicated coconut
  • 40 g LSA, see Cookidoo for recipe
  • 60 g crunchy peanut butter
  • 25 g chocolate chip
  • 10 g honey
  • 10 g coconut oil, Melted

Recipe's preparation

  1. Preheat oven 190 degrees and set as aside a baking tray.

  2. Place a bowl onto mixing bowl lid and weigh buckwheat into it, cover with boiling water and set aside for 3 minutes, then drain and rinse buckwheat well with cold water. Transfer onto baking tray and bake 15 minutes (190 degrees)

  3. Place remaining ingredients in to mixing bowl and chop 30 sec/speed 8.

  4. Add buckwheat and mix 10 sec/speed 5. Transfer into silicone bar-moulds. Place into refrigerator to set for approx 30 minutes. Remove from moulds and cut each bar into 3 to make bite size pieces. Place into an airtight container and store in refrigerator for 1 month or freezer for 6 months.

Tip

If you do not have silicone bars mould, you can roll into 18 balls.
