Barbs Cheese Scones
SCONES:
- 225 g self-raising flour
- 1 pinches salt
- 1 pinches cayenne pepper
- 1 tsp baking powder
- 55 g Butter, cut into cubes
- 100 g Cheddar cheese, cut into cubes
- 80-90 g Milk, plus extra for glazing
- 3 slices pepperoni, Optional
- 6 sun-dried tomatoes, Optional

- Preheat oven with the baking tray inside to 200°C (180°C fan forced)
- Measure into bowl, flour, salt, cayenne pepper and baking powder.
- Turbo twice to ensure all ingredients are thoroughly combined.
- Add butter cubes and cheese cubes and turbo 1 second to make breadcrumbs. (Add pepperoni or tomatoes at this stage).
- Add 3/4 of the milk and mix (just to combine) on Knead setting. Watch thru hole in lid - may need to add a little more of the millk.
- Lightly flour a surface and push the the dough together to approximately 2cm thick.
- Cut out the scones with a medium cutter (OR CUT INTO MINI SQUARE SCONES) and place on a 2nd cold baking tray lined with baking paper.
- Glaze the tops of the scones with the extra milk.
Then transfer from the cold tray onto the hot oven tray using the baking paper as a slide. IMPORTANT TO FOLLOW THIS STEP. - Bake in bottom of the oven for 10-15 minutes or until golden brown and cooked through.
DIRECTIONS:
Tip
I love the mini scones, freeze once cold.
Defrost in microwave on Defrost Setting about 20 secs till warmed through.
Cut in half, add a little Lurpak butter to each half - the Perfect Mouthful!

Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
