- 375 g Wheatflour, It's best to use a flour such as 00 flour or baker's flour
- 125 g rye flour
- 10 g fresh yeast
- 175 g buttermilk
- 200 g water
- 1 teaspoon molasses or honey
- 7 g salt

Place all ingredients into mixing bowl and knead 4 minutes "Dough mode" to dough consistency.
Place the dough into the thermoserver or a bowl and cover. Let dough rise for three hours.
Place the dough on a surface with flour, form it into a bread shape and cut into its surface three times across the top with a sharp knife.
Pre-heat the oven to 250 degrees celcius and before putting the bread into the oven fill water into the bottom of the oven. Put the bread into the oven and bake for 15 minutes.
After 15 minutes, turn the heat down to 180 degrees celcius and bake for a further 30-35 minutes (continue to wet the surface of the bread with water (use spray can or brush).

About 5g dry yeast or just under should be the equivalent.
Hi, am I able to substitute the fresh yeast with instant yeast. If ok, how much? 2 teaspoons? Thanks
