Ingredients
- 330 g warm water
- 2 tsp dried yeast
- 600 g bakers flour
- 12 Dried Dates
- 1-2 tsp salt
- 2 tsp sugar
- 1 tsp bread improver
- 15 g extra virgin olive oil
- 200 g sultanas
- 1.5 tsp mixed spices
- 1.5 tsp cinnamon

Place water, yeast and sugar into mixing bowl and heat 2 min / 37 degrees / speed 1.
Add flour, dried dates, bread improver, salt, olive oil, cinnamon & mixed spices.
Knead 4 min / Interval setting "Dough mode"
Add the Sultanas. Knead for a further 2 min / Interval setting "Dough mode" .
Tip the dough into an oiled bowl and cover with cling film.
Place bowl in a warm place and leave until doubled in size. At least an hour to prove.
Once proved, knock down by punching down on the dough.
Shape to fit in tin. Once again cover with cling film and allow to prove until dough reaches the top of bread tin.
Heat oven to 200 degrees Celsius. Bake for approximately 30 minutes. Bread should be golden in colour and give a hollow sound when you knock on the bottom.
Tip
As most date pips are removed by machine, I always check mine thoroughly before adding. One snuck into the mix just recently!

Thanks for this recipe! I made this fruit bread yesterday & my husband loved it. I added an extra tsp of yeast powder due to the cold weather. It proved beautifully in the thermoserver & gav a light & fluffy loaf.
