Ingredients

  • 25 g millet
  • 95 g Buckwheat groats
  • 70 g amaranth
  • 50 g brown rice
  • 60 g tapioca flour
  • 1 tablespoon Arrowroot
  • 150 g Mixed seeds, I use sunflower and pepita
  • Pinch salt
  • 1 tsp stevia, I use 1 sachet of sweetleaf
  • 2 tbsp Psyllium husk
  • 1 sachet of yeast, 7g sachet
  • 2 eggs
  • 1 tsp apple cider vinegar
  • 30 g oil, I use coconut
  • 300 g warm water

Recipe's preparation

  1. Mill grains 1 MIN/SP 9.5 until fine

    Add remaining dry ingredients, 40sec/Counter-clockwise operation"Counter-clockwise operation" SP 3

    Add wet ingredients 1MIN/Counter-clockwise operation"Counter-clockwise operation" SP 5

    Spoon into lined loaf tin

    Prove 40-60 mins until almost double in size

    Bake in oven 45mins 180 (celcius).

    Remove from oven, turn oven off, sit in tin for 20 minutes, then turn out loaf onto baking tray or rack and place in oven. Leave loaf in oven for at least 15-20 minutes.

Tip

For Egg free - make chia eggs (1 Tbsp chia, 3 Tbsp water)

For Yeast free - 1.5 tsp baking powder + 1/4 of a lemon juiced

Can add dried herbs for flavour or cinnamon when dry ingredients are added.

If you can't use Millet or Amaranth increase rice.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
