Ingredients

  • 250 grams plain flour
  • 35 grams mixed sesame & chai seeds
  • 2 stalks fresh rosemary
  • 1 teaspoon sea salt
  • 40 grams olive oil
  • 1 tsp dried yeast
  • 120 grams warm water
  • Cracked Pepper to taste

Recipe's preparation

  1. Preheat oven to 180 degrees

    Add all dry ingredients. Mix on speed 9 for 10 seconds

    Add oil and mix speed 6 for 5 seconds

    Add water and mix speed 6 for 5 seconds

    Knead Dough mode"Dough mode"  for 1 1/2 minutes

    Turn out onto Thermomat, shape into ball and allow to rest for 30 minuites wrapped in the mat

    Chop dough into walnut size balls. Add a little flour and run each dough ball into the wring of a pasta machine. (Alternativly roll out very thinly onto baking paper and score into the shap you want your crackers to look lik)e.

    Bake inthe oven straight onto a baking tray for about 10-12 minutes until golden.

    I demonstrated these at an online cooking class 20/9/20 as we love this recipe and make them so much. They make a wonderful gift.
    They keep extremely well in an airtight tin.
    My way is to not use so much speed on that first mix so that we can still tell that there is rosemary and sesame seeds in there, i use a mix of black and white sesame seeds.
    Nigella seeds are also delicious in it.

    These are delicious. Super easy, and the recipe makes a lot. Way nicer and cheaper than store bought.

    So yummy. We loved making these, putting the dough through the pasta maker. My 6 year old granddaughter did them all and she had a great time. I just used sesame seeds and then sprinkled poppy seeds throughout the final dough. So nice on their own or with the BCB hummus.

    Yum these are fantastic.  I tried 2 batches - the first as above, and then I did black sesame seeds instead of the sesame/chia, and omitted the rosemary, instead adding 1/2 tsp of fennel seed.  Really good.  I rolled to 5 on the pasta roller because I wanted them to be a bit more solid for use with dips.

    Just finished a batch of these for Christmas day tomorrow. Perfect, light and crunchy. 

    Rolling them out on the pasta maker was great, made them lovely and consistent. I rolled them to number 6 on my pasta maker. Seem so thin when they were raw, but they thickened up when cooking. 

    I also replaced the chia seeds with linseeds and it worked well.
