Ingredients
- 1 brown onion, halved
- 2 tablespoons oil
- 2 cloves garlic
- 2 cm fresh ginger
- 2 small turmeric roots
- 2 cinnamon sticks
- 1 tablespoon ground cumin
- 1 tablespoon Ground Coriander
- 1 pinch cayenne or fresh chilli
- 1 teaspoon ground turmeric
- 1 can (400gm) chopped tomatoes
- 2 cans drained chickpeas
- 2 diced zucchini's
- 400ml Boiling water
- 2 tablespoons vegetable stock concentrate
- 100gm baby spinach

I'm cooking this todayRecipe's preparation
1. Chop garlic, ginger and turmeric 3 sec / sp7. Add onion 2 sec/ sp 6. Scrape down sides.
2. Add oil and sauté at Varoma /5 minutes / sp 2
3. Add water, stock, tomatoes, whole cinnamon, cumin, coriander, cayenne, ground turmeric. Simmer 100degrees / 10 minutes/ / sp 2.
4. Add chickpeas and zucchini. Simmer 100degrees / 20 mins / / speed 1
5.Check seasoning and add the spinach, use spatula to incorporate.
6. Pour curry into Thermoserver to rest. Top with yoghurt and chopped coriander. Serve with steamed rice.
Tip
Fresh and ground turmeric may stain the underside of your lid and MC, but with not effect it's use.
This Curry is quite saucy, so leftover diced cold meats can be added at the same time as the chickpeas.
