Ingredients

Bread Mix

  • 60 grams Parmesan cheese
  • 180 grams almond meal
  • 110g grams arrowroot/tapioca flour
  • 1/2 tsp salt
  • 1/2 tsp bicarbonate soda
  • 1 tablespoon Parsley chopped
  • 50 grams ham
  • 150 grams zucchini roughly chopped
  • 5 eggs
  • 1 1/2 tsp apple cider vinegar
  • 2 tablespoons pepitas

Recipe's preparation

  1. Preheat oven to 160 degrees.

     

    Place parmesan cheese into bowl and grate 10 sec/speed 9 set aside. 

     

    Place almond meal, arrowroot, salt, bicard of soda and combine 5 sec/speed 5 set aside. 

     

    Chop parsley 3 sec/speed 7.

     

    Add zucchini and ham to bowl chop 2 sec/speed 6

     

    Add eggs, apple cider vinegar & parmesan cheese mix 5 sec/speed 5/Counter-clockwise operation"Counter-clockwise operation"

     

    Add dry ingredients to bowl and mix 20 sec/speed 3/Counter-clockwise operation"Counter-clockwise operation"

     

    Pour into loaf tin and sprinkle with pepitas and bake for 30 minutes. Let cool for 5 minutes on wire rack then slice. 

     

    Freeze leftovers betweem sheets of baking paper in ziplock bags.

**To make own almond meal place 250g almonds and blitz 5-7 seconds/speed 7**

    Very solid recipe that tastes great. I grind the almonds in the TM for the almond meal. Also once I forgot ham, but had chorizio. This added a lovely peppery flavour.

    Thanks for the recipe. The bread is very nice. Very good for someone that train and wanting good carb in their diet. I used lean ham instead
