Bread Loaf

  • 425 grams pumpkin, peeled & roughly chopped
  • 130 grams Plain Flour.
  • 130 grams wholemeal plain flour
  • 1 tsp All Spice Ground
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp bicarb soda
  • 1/2 tsp salt
  • 60 grams raw sugar
  • 85 grams honey
  • 140 grams Greek yoghurt
  • 2 large eggs
  • 80 grams coconut oil, melted & cooled

Recipe's preparation

    Cook Pumpkin
  1. Pour 500g water into the mixing bowl & place chopped pumpkin into the Varoma dish. Steam for 20min/Varoma/speed 1 or until pumpkin is soft & cooked through.

  2. Empty water from mixing bowl & place cooked pumpkin into the mixing bowl & puree 20sec/speed 4-8, increasing speed gradually. Scrape down sides of the mixing bowl with spatula (repeat blending if pumpkin until pumpkin is puree).

  3. Pumpkin Bread Batter
  4. Preheat oven to 180 C. Grease and line a deep-sided loaf tin (25 x 10 x 11cm) with baking paper and set aside.

  5. Add coconut oil & sugar to the pumpkin puree & mix 20sec/speed 4. Scrape down sides with the spatula.

  6. Add eggs and mix 10secs/speed 4

  7. Add plain flour, wholemeal flour, all spice, cinnamon, bicarb soda, baking powder salt, honey plus greek yoghurt and combine 20sec/speed 4. Scrape down sides & mix for a further 10sec/speed 4 if needed.

  8. Pour into prepared loaf tin and bake at 180 C for 60 minutes, or until a wooden skewer inserted in the centre comes out with a few crumbs attached.

  9. Cool in pan for 10 minutes, then lift out and cool on wire wrack for another 10 minutes.

  10. Slice & Serve. Wrap & store at room temperatire for 3 days.

Tip

With very little sugar, healthy fats & loaded with pumpkin, this bread is a delicious healthy snack for all to enjoy. A great lunchbox or afterschool snack for kids.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
