Ingredients

Robs Breakfast loaf

  • 150 grams dried apricots
  • 115 grams pitted dates, (dates without seeds)
  • 3 Weetbix, crushed with your hands
  • 90 grams sultanas
  • 70 grams sugar, According to taste
  • 1 pinches salt
  • 450 grams full cream milk, (add this last)
  • 2 eggs, (1-2 eggs)
  • 240 grams self-raising flour, sifted
  • 50 grams full cream milk, (as required)

Recipe's preparation

    Rob Breakfast Loaf
  1. Add 150gms apricots to mixing bowl;
    add 115gms dates;
    speed 6 for 10 secs chop mode
    add the 3 weetbix
    add 90gms sultanas
    add 70 gms sugar
    add pinch of salt
    add 450 gms of the milk
    then reverse mix speed 1 for 30 secs
    then speed 3 for 30 sec still in reverse mode
    Scrape down the sides with spatula and let it soak for 2 hours in the bowl

    Then add 1-2 eggs
    add 240 gms SR Flower
    reverse mix speed 3 for 1 minute 30 secs
    add 50 gm of milk less or more as required
    mix on speed 3 reverse for 30 seconds

    Pour into a greased and bread crumbed loaf tin
    170 degrees for 1 hour
    Test with skewer, may need an extra 5-10 mins
    Should be nice and brown on top

    Best serve toasted with butter!
