I'm cooking this today

Recipe's preparation

    Making the dough
  1. Place milk and butter in bowl.
  2. Heat milk and butter, 45°C, speed 2, 3 minutes. (Or until butter is melted)
  3. Add eggs, sugar, yeast
  4. Mix for 3 seconds at speed 3.
  5. Add flour and salt.
  6. Mix the dough for 6 seconds at speed 6.
  7. Knead the dough for 4 minutes, until smooth and soft.
  8. Transfer dough to a well oiled bowl.
  9. Cover with glad wrap and let rest for one hour or until doubled in size.
  10. Knock back the dough and weigh. Divide your result by 18.
  11. knead each ball until smooth. Role in breadcrumbs (I use panko) and place on a lined baking sheet.
  12. Cover with plastic film and let rest for another 30 to 45 minutes or until doubled in size.
  13. Bake for 18 to 20 minutes into oven set at 180°C.
  14. Allow to cool slightly before eating✌️

Tip

Keeping your hands well oiled will stop the dough from sticking to your fingers. Do not use flour to roll the dough. Use and oiled bench, to avoid having the dough dry out.

    TM 6
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
