Ingredients

Dough

  • 155 g Milk
  • 55 g sugar
  • 7 g dried instant yeast, or 13 g fresh Yeast
  • 1 egg
  • 5 g oil
  • 50 g Butter
  • 300 g flour
  • 2 g baking powder
  • 2 g salt
  • 3 g bread improver, Please check percentage of flour to improver
  • 175 g Whipped Butter or Margarine, used for topping and preparation
  • 150 g sugar
  • 50 g Cheddar cheese
  • 100 g Ube Halaya, See my other recipies

Recipe's preparation

    Dough
  1. Add Milk, Sugar, yeast and oil to thermo mixing bowl.
  2. Heat Warm Up"Warm Up" 4 minutes (37'C) speed 1.
  3. Add Flour, salt, Bread Improver and Baking powder to Bowl
  4. DoughDough mode"Dough mode" Function 2 mins add butter (50g) while kneading
  5. Resting
  6. After Kneading, Allow to rest in a well oiled bowl. Cover with Damp tclean tea towel or plastic wrap for approx 1 hour or til doubled in size
  7. Shaping Ensaymada
  8. Divide the dough into 10 - 12 sized equal portions.
  9. shape into balls or desired shapes.
  10. Spiral shape - roll dough using rolling pin into rectangle shape.
  11. Brush with whipped butter and roll into a long cigar shape. (20-30 cm)
  12. Start from one end, coil up like a snail shell
  13. place rolled dough into mold/tray and rest for 40 mins (covered)
  14. Bake in pre heated oven 170'C for 12-15 mins
  15. Finishing off
  16. once Ensaymada cooked and totall cooled,

    SPIRAL - Brush with whipped butter and roll in sugar and Greated Cheese

    ROUND - Fill with your favorite fillings (using piping bag) eg ube Halaya, whipped cream, custards etc and top withh your favorite toppings (ube and Cheese)
