Ingredients

  • 300 g water
  • 100 g Milk
  • 1 sachet dried yeast
  • 1 teaspoon sugar
  • 600 g Bakers Four
  • 30 g olive oil
  • 1 teaspoon salt
  • 4 tablespoons natural yoghurt
  • 1 egg yolk
  • 1 tablespoon sesame seeds
  • 1 tablespoon nigella seeds

Recipe's preparation

  1. 1. Preheat oven to 225C. Line two oven trays with baking paper and sprinkle with flour.  

    2. Place water, milk, yeast and sugar in mixing bowl and heat 2 min/37C/speed 1.

    3. Add oil, salt and flour and mix for 5 sec/speed 5, then knead for 2 mins/kneading.

    4. Turn the dough onto a lightly floured bench or Thermomat. Fold dough into a ball and wrap in the Thermomat, or place in a lightly greased bowl and cover. Leave in a warm place for 30 mins, or until doubled in size.

    5. Knock down dough and divide into 8 equal portions. Roll each portion into a ball and flatten with your hand to form a round disc approximately 10cm in diameter. Place on an oven tray and repeat with remaining dough.

    6. Score each roll with a diagonal diamond pattern. Leave in a warm place and prove for another 30 mins.

    7. Combine yoghurt and egg yolk in a small bowl. Brush each roll with yoghurt mixture and sprinkle with sesame seeds and Nigella seeds.

    8. Place a tray with water on the lower oven shelf. This helps to form an outer crust. Place one tray of rolls in the oven and bake for 15 mins or until golden brown. Remove from oven and bake remaining tray of rolls.
