Ingredients
bread
- 100 g whole rye grains
- 1 sachet Yeast
- 1 teaspoon sea salt
- 1 tbsp pumpkin seed oil
- 1 tbsp macadamia oil
- 300 g water
- 400 g bakers flour
- 3 green apples, peeled, cored & quartered
- 1 handful walnut halves
- 2 tablespoons unsalted butter
- 2 tablespoons black molasses sugar (or brown)
- 1/4 teaspoon grated nutmeg
- 1/4 teaspoon ground tasmanian pepperberry, replace with a pinch of sumac maybe?

I'm cooking this todayRecipe's preparation
mill whole grain for 1 minute on speed 9-10
add all remaining ingredients and process on speed 5 for 6 seconds
knead on interval speed for 90 seconds
allow to rise
when ready, knock down and roll into large rectangle.
Visually divide the rectangle into thirds lengthways.
cut ribbons down the outer edges to plait later.
Pile filling into centre then "plait" the bread by alternately folding one ribbon from left to right then right to left.
tuck in the ends and brush with an egg wash (you can allow it to rise again a little at this point, providing your filling isn't too soggy!
chop two large green apples into eigths and then into small pieces.
Heat bowl and butter for 1 minute on varoma temperature, speed 2.
Toss in apples and walnuts and continue on varoma temperature for a further 3 minutes.
add molasses sugar and continue varoma temperature speed 2 for a further 2 minutes.
Ideally cool and strain (juice can be boiled down later to make a yummy glaze!)
serve with a dish of uncooked molasses sugar or brown sugar and a nice piece of blue and if you have them, perhaps some muscatdels or dried turkish figs...and a glass of red...

oh dear...sorry all...should have read the text book on uploading recipes! But here it is, nonetheless! Influenced by "Homestead Survival" blog, by The Festive Cookbook, and experimenting with Billingtons molasses sugar...yum yum yummmmmmm...be careful with it, my husband eats it by the spoonfull!!
