  • 125 g Butter, Diced
  • 200 g dark chocolate
  • 2 egg yolks
  • 2 Eggs (whole)
  • 30 g caster sugar
  • 125 g raspberries

Recipe's preparation

    Baked chocolate raspberry tarts
  1. 1. Prepare SWEET SHORTCRUST PASTRY as on pg 50 on the basic cookbook.

    2. While pastry is in the oven, place the chocolate & butter in a heat proof bowl, and place it over a pot of boiling water.

    3. While the chocolate & butter are melting, place the two eggs with the two extra yolks & sugar in your TM with butterfly whisk inserted & whip for 5 MIN/SPEED 3.5.

    4. Remove the melted chocolate/butter from stove & add it to the whipped egg & whip for another 2 MIN/SPEED 3.5.

    5. Pour chocolate mixture onto pastry & continue to bake  for additional 15-20 MINS at 180c.

    6. Remove from oven & decorate with fresh raspberries.
