Ingredients
Batter
- 140 grams raw sugar
- 310 grams plain flour
- 2 teaspoons baking powder
- 125 grams white chocolate bits
- 120 grams Butter
- 2 eggs
- 250 grams buttermilk
- 1 teaspoon vanilla extract
- 150 grams Blackberries

Preheat oven to 180°C. Lightly grease a 12 capacity muffin pan.
Place raw sugar into TM bowl and mill for 3 seconds on Speed 9.
Add flour and baking powder and mix on Turbo to sift (I do about 3 pulses of the turbo button for less than one second each time).
Add the white chocolate bits to the TM bowl and mix on reverse for 20 seconds on Speed 3, set aside dry mixture.
Place butter into TM bowl and melt on 100 degrees, 1 minute on speed 4.
Add eggs, buttermilk, vanilla extract and mix on speed 2 for 15 seconds.
Use 1-2 tablespoons of the dry mixture and sprinkle over blackberries to coat them (this helps them from sinking to the bottom of the batter)
Add the remaining dry ingredients back into the TM bowl and mix for 30 seconds, Speed 6 on reverse.
Add the blackberries (and any excess dry ingredients) and gentle fold into the mixture with the spatula.
Spoon the mixture into the muffin holes.Bake for 20 to 30 minutes or until a skewer inserted into the centre comes out clean. Stand in pan for 5 minutes before turning onto a wire rack.

Delicious muffins and very easy to make. I didn't have any buttermilk so used plain greek yoghurt instead and came out fine.

Delicious!!!! These muffins are so yummy and super easy to make! I made 2 batches today (at different times) as the first batch was such a hit - this will definetely be one of my go to muffin recipes!
These muffins are just devine. I froze some hand picked berries a few months ago and popped them straight into the mixture - so juicy and yummy. This recipe would have to be one of the best muffin recipes I've ever made. You must try them.
