- 1 litre cumquats
- 2.5 cups sugar
- 1 stick cinamon
- 6 whole cloves
- 1 cup brandy
- 6 pods star anise

Rinse cumquats and carefully remove any stalks without damaging the fruit
place in simmering basket. Add 1 litre water and cook for 15mins - Varoma - Spd 2
remove basket from bowl (Careful! It's hot!) reserve 2.5 cups of the water and throw away the rest.
put the 2.5cups of water back into the bowl and add the 2 cups sugar. Cook for 3mins - 90 - Spd1
Using a slotted spoon, carefully add the cumquats back into the TM Bowl. add star anise, cinamon, cloves. Cook for "Counter-clockwise operation" 10mins - 90 - Sp"Gentle stir setting"
Pour Brandy over cumquats in TM Bowl
using slotted spoon again carefully put the cumquats in jars. When full pour brandy syrup mixture over filling the jars to the top. Make sure each jar had part of the cinamon stick, star anise and cloves.
Leave in a cool dark place for at least two weeks before using. I recommend 6 months.

Tip
The cumquats are super yummy with icecream.
The liquer, strained off is delicious as a digestif, used on steamed varoma puddings or over hot chocolate cake.
Cumquats are in season in Winter in Perth and making them now makes it perfect to open up at Christmas!
I use one of the cheaper brandy's like St Agnes (or stock up when it's on special!)

I've only had my Thermomix for 3 days and keen to try different things and especially produce from my garden which is in season, such as Cumquats! Thank you for this recipe. My Cumquats tree is ladened with fruit. I picked 13 kgs the other day and looking for ways to use them up!
I tried this recipe but my fruit was too ripe and they broke up when stired but I think that was because the fruit was too ripe.
I also replaced the sugar with Stevia as I've taken sugar out of my diet. It will be interesting to see what the Cumquats tastes like in a few months time.
I too found that there was a lot of liquid left over and I used very little of it and only used half of the Brandy suggested.

I experimented with this recipe for the first time today.
The recipe said 1 litre? of cumquats, i used 670gms which fits into the TM basket just right.
I was a little confused over the 2.5 cups of sugar in the ingredients and then in the recipe it said add 2 cups of sugar and i was unsure when i was supposed to add the other half cup ??? so i just added the 2 cups and left it at that.
I was worried that the blades (even on reverse) would mush up the cumquats, but as they all floated it didn't matter.
The cumquats fitted 2 x 500ml jars perfectly, but there was so much liquid i only measured off 3/4 cup and added 60gms of brandy which topped up the jars nicely. I was so glad i didn't waste all that brandy in the sugar syrup as i had tons of liquid left over.
Next time i might just forget the sugar syrup all together and top the jars with brandy as there was hardly any room what with the compact cumquats Can't wait to try them out, i'm going to eat them in 6 months time for ultimate indulgence and maturity at Christmas x
