Ingredients

rissoles

  • 500 gram lamb steaks
  • 2 spring onions, chopped
  • 1 tablespoon Barbecue Sauce
  • 2 garlic cloves
  • 1 egg
  • rice crumbs
  • 100 gram feta cheese, crumbled
  • 2 tablespoon Basil leaves
  • olive oil, for shallow frying

Recipe's preparation

  1. Drop into TM Bowl the garlic, spring onions and basil 10 secs - Speed 7.

    * Don't scrape down off sides!

  2. Cut steaks into chunks about the size of iceblocks. Add to bowl.

    Mince for 10 secs/speed 7

  3. Add bbq sauce, 1/3 cup of ricecrumbs, egg, crumbled fetta (omit feta for dairy free version).

    Scrape the sides of the bowl down to catch any garlic, onions or basil up higher.

    Combine for 20 sec/speed 3

  4. In a shallow bowl bowl put some rice crumbs for coating. Tip the mince mixture out of the TM Bowl onto a chopping board covered with glad wrap. With cold wet hands shape into eight rissoles and coat with rice crumbs. Put on a plate and chill in the fridge for half an hour.

     

     

  5. Preheat oven to 180° /160° fan forced.

    pour enough oil into a large, deep frying pan to come 5mm up the side of the pan. Heat over medium high heat. Cook rissoles in batches, for 4-5 mins each side or until browned all over. Transfer to a baking tray.

    Bake for 10 mins. (i've also skipped the baking step and just cooked a bit longer in the frying pan).

  6. Serve with Tomato Chutney (recipe coming soon!), lemon wedges and salad.

Tip

Freeze beautifully pre-cooked and perfect cold the next day for lunch.

    These were so yummy! I used ground oats instead of rice crumbs as I didn't have any and wasnt really sure what they were but no I know how to make them thanks to KatherineB. I also just had lamb mince already so just reversed when mixing which left the chunks of feta

    These were awesome! I put fresh mint to the raw mixture, and left the basil out but added it to the crumb (still GF breadcrumbs). When mixing all ingredients i actually put it on reverse so it didn't break down the feta too much - so we had lovely chunks of feta through the burgers. I added home-made mint jelly (we have mint galore!) to the cooked burgers on my plate and just added that sweetness to them.

    Also cooked entirely in the pan, rather than oven bake.

    KIds LOVED them and my son has taken leftovers for school lunch (hubby wasn't home so I dare say next time he'll devour them as well, he's quite the rissole - wait - meat in general - fan. Big Smile

    Tasty recipe thank you! I used mint instead of basil and cooked them whole time on the stove instead of oven

    These were so yummy! I added mint, parsley and rosemary to them and used some left over turkish bread made into breadcrumbs as a substitute for the rice crumbs. I think next time I will just pan fry them as they seemed to lose their crunchiness and dried out a little in the oven. Fussy Mstr 4 ate it without a hassle!
