Caramel Anzac Slice

  • 240 g rolled oats
  • 85 g dessicated coconut
  • 270 g brown sugar
  • 360 g plain flour
  • 350 g unsalted butter
  • 60 g golden syrup
  • 140 g water
  • 180 g raw sugar
  • 110 g milk powder
  • 10 g bicarbonate of soda

Recipe's preparation

  1. Weigh into bowl oats, coconut, brown sugar and plain flour. Turbo 2 x 1 second then set aside in a large bowl.

    Preheat oven to 180°C.

    Weigh in 250g cubed butter, melt 4 minutes, 90°C, speed 2. Add 40g golden syrup and 15g water, 10g bi carb soda, mix 20 seconds, speed 2. Pour into bowl with oat mixture and mix well.

    Grease a springform tin, add 2/3rds of oat mixture and press down. Set aside.

    Add 125g water and 40g butter to bowl, 3 minutes, varoma,speed 2.

    Add raw sugar, milk powder and blend 30 seconds, speed 10.

    Add 60g butter, 20g golden syrup and cook 20 minutes, 100°C, speed 2.

    Pour onto oat base, then spread remaining mix on top.
    Cook in oven for 30 minutes, remove from oven and rest for 20 minutes before releasing from tin.
