Ingredients

Base

  • 1 package Chocolate Ripple Biscuits
  • 20 gram Desiccated Coconut
  • 50 gram unsalted butter

Filling

  • 500 grams cream cheese, Broken into pieces
  • 200 grams cherry ripe bars, Broken into pieces
  • 70 grams raw sugar
  • 150 grams Pouring Cream
  • 100 grams milk chocolate melts

Topping

  • 100 grams cherry ripe bars, Cut into chunks

Recipe's preparation

    To make base
  1. Line springform tin with baking paper

    Add chocolate ripple biscuits and coconut to TM bowl, replace lid and MC - mix 30 second speed 9

    Add butter to biscuit crumble, replace lid and MC - mix 1 minute 60 degrees speed 4

    Tip into prepared tin push down then refrigerate while working on next step

  2. Cheesecake filling
  3. Add cream cheese, cherry ripe bars, raw sugar, pouring cream and milk chocolate melts to TM bowl, replace lid and MC - mix 4 minutes 60 degrees speed 4.5 - repeat in 1 minute batches if not yet melted

    Once mixture is smooth pour over biscuit base 

    Return to refrigerator for approximately 30 minutes 

  4. Topping
  5. After 30 minutes cut remaining cherry ripe bars into chunks and arrange on top of cheesecake, put cheesecake back into refrigerator until set

This cheesecake can be made with other chocolate I place of the cherry tipe bars eg mint slice, caramello, toblerone,

    Really loved this recipe, very simple and fast to make. This cheesecake has a beautiful silky smooth texture which I was extremely impressed by.

    I used 50g of sugar and closer to 200g of 70% dark choc melts. The cherry ripe flavour in the actual filling was largely overpowered and I think this was due to using dark choc, however I still loved the flavour - very rich, but complimented on by all our guests.

    I will definitely be making this again and am keen to try different varieties of chocolate bars as I thought the texture was just unbeatable.

    Yummy but very rich and sweet. Made this for my husband's birthday and while he loved it, he said maybe he should've taken a smaller slice lol. I think I'll make it again in a few weeks time but with a different chocolate (just for a different taste) add less sugar and milk chocolate melts. A quick and easy recipe to follow though, so thanks!

    For the topping - what remaining cherry ripe bars it says to add to filling. Does specify how much to add to filling and how much to leave for topping. Puzzled

    Superb and so easy to make.

    Can't fault this recipe. 

    Generally I use brand name items, but apart from the Cherry Ripe I used the Coles branded cream cheese and butter and it worked a treat. I was quite impressed at how the Cherry Ripes melted into the cream cheese.

    Had some biscuit base left over so I sprinkled it into small dessert bowls and then topped them with the leftover cheesecake mixture.
