Ingredients

Base

  • 250 grams Gingernut biscuits
  • 125 grams Butter

Cheesecake

  • 750 grams cream cheese, softened
  • 200 grams sugar, includes 50gm for Cherry Topping
  • 1.5 tsp vanilla extract
  • 2 eggs
  • 200 grams natural greek yogurt

Cherry Sauce

  • 400 gram Jar of Cherries, drained, liquid reserved
  • 2 tsp cornflour
  • 1 tbsp water

Recipe's preparation

    Base
  1. Grease & line a spring-form tin (23cm)

     

    Place gingernuts into bowl and grind into fine crumbs 20 secs / speed 8. Set Aside

     

    Melt butter 3 mins / 80 deg / Speed 1

     

    Return crumbs to bowl & combine with butter 5 sec / Speed 6

     

    Press into tin (base & sides) and refrigerate.

     

  2. Cheesecake
  3. Place sugar into a clean & dry bowl & grind 7 secs / speed 10. Put aside

     

    Place 500gm cream cheese, 1 tsp vanilla, 2 eggs & 100 grams of the milled sugar into the bowl & mix 20 secs / Speed 5

     

    Pour onto prepared base & bake at 180 degC for 15 mins. Cool 5 mins

     

    Place 50gm sugar (previously milled), 250gm cream cheese, half tsp vanilla & greek yoghurt into bowl and mix 20 secs / Speed 5

     

    Pour over cooked base and bake 15 mins until just wobbly in the centre. Allow to cool in the oven with door ajar. Chill

  4. Cherry Sauce
  5. Place remaining sugar (previously milled-50gm), reserved cherry liquid and cornflour/water mixture into bowl and heat 5 mins / 80 deg / Speed 1

     

    Stir in cherries and cool.

     

    Slice the cheesecake and place onto serving plates, spoon over cherries & liquid.

Tip

This cheesecake is quite rich so only small serving sizes are recommended.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
