Ingredients

Cake Batter

  • 125 grams Butter
  • 125 grams caster sugar
  • 40 grams siften icing sugar
  • 2 eggs
  • 1 teaspoon vanilla essence
  • 80 grams Jam (any flavour)
  • 155 grams self-raising flour
  • 60 grams cocoa
  • 1 teaspoon bicarb soda
  • 235 grams Milk

icing

  • 100 grams Dark chocolate into pieces
  • 80 grams pure cream

Recipe's preparation

    METHOD
  1. Preheat oven to 180 and grease and line a 20 cm square cake tin

    Add butter, sugar and icing sugar and mix 20 sec speed 4 until light and creamy. Add eggs one at a time and add vanilla and jam. Continue to mix 10 sec speed 4. Scrape down side of bowl with spatula.

    Add in flour, cocoa, bicarb soda and milk. Mix 20 Sec speed 4.

    Pour into cake tin and bake for 45 mins or until cooked.

  2. ICING
  3. Place dark choclate into mixing bowl and grate 10 sec speed 8

    Scrape down sides of bowl with spatula. Add cream and heat 2mins 50 degrees speed 3.

    Once cooled it will slightly thicken and can be spread onto cooled cake.

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     This cake is lovely. I doubled the recipe and used Apple and cinnamon jam. My icing wouldn't set, next time I will cut the cream back to 50g.
