Base

  • 250 g Plain chocolate biscuits
  • 80 g Butter
  • 2x-125 g Packets chocolate finger honeycomb biscuits

Cheese filling

  • 500 grams cream cheese
  • 100 grams brown sugar
  • 3 teaspoons gelatine power, Dissolved in 1/4 cup boiling water
  • 1 teaspoon Vanilla Paste
  • 100 grams cream
  • 50-100 grams Honeycomb chocolate bar, extra for decoration, Finely chopped

  1. 1. Crush biscuits 10sec/speed 7,set aside. 

    2. Weight butter into mixing bowl- melt 2min/100°c/speed 2.

    3. Add biscuit crumbs to melted butter, mix 5sec/speed 5, press the biscuit crumbs into a greased 20cm Spring form tin, press down with the back of a spoon. Rinse thermomix bowl. 

    4. Layer the finger biscuits around inside of the tin. 

    5. Insert the butterfly whisk, add to bowl cream cheese ,sugar ,vanilla ,cream whisk 10sec/speed 3-4 , in a cup mix boiling water and gelatine power until gelatine is dissolved.

    6. Add the gelatine mixture to the cream cheese mixture and mix 5sec/speed 3.5, add chopped honeycomb mix 3sec/speed 3. Pour mixture into tin, refrigerate overnight. When comes out of the refrigerator top with extra honeycomb.
