Ingredients
Chocolate custard gummies
- 70 g dark chocolate
- 500 g Milk
- 60 g Maple syrup
- 3 tbsp cacao powder, raw
- 2 egg yolks
- 2 tbsp collagen, optional
- 1/2 tsp salt
- 250 g water
- 4 tbsp gelatin, choose a good quality

- Place dark chocolate into bowl, mill for 10 seconds at speed 10.
- Add in milk, maple syrup, cacao powder, egg yolks, salt and collagen and use "Thickening" at 80°C
- While thermomix is thickening custard, place water into bowl and sprinkle gelatin into water. Set aside.
- Once thicken mode has finished, place gelatin/water mixture into custard. Blend 20 seconds at speed 5.
- Poor custard into moulds and set in fridge for 3-4 hours or over night. Store in an airtight jar for up to 4 days.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
