Ingredients

Chicken burgers

  • 80 g sunflower seeds
  • 1-2 clove garlic clove
  • 2 tbsp parsley
  • 100 g red onion
  • 20 g olive oil
  • 550 g skinless chicken thigh, semi frozen or very cold to mince
  • 1 tsp Dijon mustard
  • 1/2 tsp Vegetable stock paste
  • 1/4 tsp coriander seed, ground
  • 1/4 tsp sweet paprika
  • 2 pinch ground black pepper
  • 1/4 tsp chilli flake, dried, Slightly less if for kids.
  • 1/2 tsp salt
  • 1 egg
  • 40 g mayonnaise, Cooked mayo recipe

Recipe's preparation

    Chicken burgers
  1. Mill sunflower seeds for 10 seconds, speed 8. Set aside in a bowl.

  2. Place garlic and parsley, blitz for 5 seconds, speed 6, scrape down and repeat if needed. Set aside in bowl.

  3. Dice red onion for 5 seconds, speed 6. Scrap down and add olive oil. Cook for 3 minutes, varoma speed, stir.Gentle stir setting"Gentle stir setting" Set aside in bowl.

  4. Once bowl has cooled down, place 300g chicken thighs in bowl and mince - 5 seconds, speed 6. Ser aside and repeat with remaining.

  5. Preheat pan with olive oil,

  6. Add all of the prepped ingredients back into Thermomix bowl (garlic/parsley, red onion, minced meat). Add in the remainder of the ingredients. Mix for 5 seconds, speed 4, reverse blade. Scrape down and repeat using reverse blade

  7. Mixture is ready to cook. The mixture will be wet and sticky. I found it easy to cook two at a time in my pan. Mould mixture into a rough ball and place into pan. As it cooks and you flip it, pattie will flatten. Ensure your chicken is cooked. Serve on a burger bun with your favourite ingredients.

Tip

Optional:

- You could place mixture into the fridge prior to cooking to help mixture mould into patties for cooking.

- These could easily be made into chicken meatballs. I would definitely store mixture in the fridge prior to rolling into balls.

- You could half cook patties and continue cooking on a baking tray in the oven.
