Ingredients

Sticky Date Pudding

  • 200 g Dates, seeded
  • 300 g Boiling water
  • 1 tsp bi-carb soda
  • 250 g brown sugar
  • 60 g unsalted butter chopped
  • 2 eggs
  • 170 g SR Flour, or Plain with 1 tsp of baking powder
  • 1 teaspoon pure vanilla essence

Caramel Sauce

  • 350 g brown sugar
  • 250 g Unsalted butter
  • 300 g cream
  • 1 tsp pure vanilla essence

Recipe's preparation

    Sticky Date Pudding
  1. Preheat oven to 180C. Grease 20cm square tin

    Combine dates, boiling water and soda in a jug. Let stand

    Add sugar, butter and pure vanilla essence to Closed lid"Closed lid" and process  for 10 seconds on speed 6  for 10 seconds.  Scrape down

    Add eggs one at a time processing for 5 seconds speed 4 each

    Add flour and dates mixture and process 10 seconds speed 5 or until mixed.  Pour into  prepared tin and bake for 30-40 minutes

    While cake is cooking make Caramel Sauce

    Pour a little sauce over warm pudding and return to oven for 5 min

    Stand for 5 minutes before turning out.

     

     

  2. Caramel Sauce
  3. Place all into TM bowl and cook on 80C, speed 1 for 2 minutes unti butter has melted.

    Cook for another 5 - 8 minutes on Varoma, speed 3-4. Sauce will thicken on standing. 

Tip

Use thickened cream or add more butter if you would like the sauce to be a little thicker.

Alternatively, cook it longer.

    Stupid question alert.

    in the recipe it asks for 200g dates seeded. Does that mean 200g dates with seeds removed or 200g with seeds left inside as I'm assuming you won't want to cook dates with seeds in. 

    Mum making this dessert for a special occasion so want to make it perfect. Thanks
