Ingredients

Crust

  • 100 grams raw sugar
  • 100 grams Butter, Cold
  • 100 grams plain flour
  • 1 level tsp Vanilla Paste

Puffs

  • 130 grams water
  • 160 gram Milk
  • 120 grams Butter, room temperature
  • 6 grams salt
  • 6 grams sugar
  • 160 grams plain flour
  • 220 grams eggs

Recipe's preparation

    Crust
  1. 1.Add in all the ingredients for the crust into mixing bowl at 20seconds, Speed 6
    then refrigerate for 30mins
    2. Take out chilled dough and roll out flat and use a round cutter to cut out round shape that will be going to be a little hat for the piped puffs mixture
  2. Puffs
  3. 1.Add water, milk and butter into mixing bowl for 7mins, 100c Sp 1
    2.Add in flour, blend 20second Sp3
    3.Put in butterfly whisk , without measuring cup, Sp 2.5 until the temperature comes down to 60c
    4.Once temperature lower down to 60c,
    still whisking, add in one egg at a time through the measuring hole
    5. Once all blend, put dough mixture into piping bag , pipe into desire shape and top it with the cut round crust dough
    6. Preheat oven to 180c and bake for 30-40mins (Do not open oven while baking)

Tip

Do not open oven while baking
Once cook, leave inside oven for another 10-15mins with oven door slight ajar
