Ingredients

Date Coconut and Cacao cake

  • 100 grams dates
  • 100 grams water
  • 1 level teaspoon bicarb soda
  • 220 grams Self Raising Flour, ( I use Gluten Free )
  • 1 banana
  • 50 grams Shredded coconut, plus extra to garnish
  • 2 heaped tablespoons cacao powder
  • 2 heaped tablespoons coconut oil
  • 100 grams Rice, Almond or soy milk
  • 2 eggs

Recipe's preparation

  1. Preheat oven to 170 and line a loaf or cake tin with baking paper.

    Place dates in TM bowl and chop for - 5sec/speed 5.

    Add water and Bicarb and cook for - 3min/100/speed 1

    Add rest of ingredients except for coconut garnish and mix for - 10sec/speed 5.

    Pour batter into prepared tin, add coconut garnish and cook in oven for 40-50min until skewer comes out clean. Leave in tin for 5 min and then cool on a wire rack. Yummy served warm!!

     

Tip

This cake works using butter and cows milk too, with the same quantities used here.

This cake is delicious, light and moist and caramel flavoured due to the combo of dates and banana.

    I made it into muffins and it was really nice. A little dry, but overall a really nice recipe!

    Loved it! I made it as per recipe using GF flour, but halved the cacao & used 2 bananas instead of 1. I took it to a friend's house to cater for her children who have dairy & gluten intollerances... all the kids had seconds. It was moist & flavoursome without being too sweet. I had to bake it for 55mins though (possibly to cater for the extra banana) & it was a little crumbly to cut (we were impatient though). I also crumbled 1/2 tbsp of brown sugar to garnish with the coconut.

    Unfortunately, my cake turned out quite dry, not sure what went wrong. Thought I might try toasting it  tmrc_emoticons.~ as the flavour is quite nice.

    Delicious!!  Freezes really well too.  I cut the cake into slices and froze them individually for my husband to take to work with his lunch.  Thanks tmrc_emoticons.)

    This cake is delicious and moist. I replaced the eggs with chia seeds (1 tblsp chia seeds to 3 tblsp water per egg), worked a treat.  Thank you!
