  • 80 grams raw sugar
  • 100 grams Cooked Beetroot, chopped into chunks
  • 500g grams Frozen Berries
  • 100 grams double cream

Recipe's preparation

    Fruity Beetroot dream
  1. Pulverize sugar on speed 9 for 20 seconds

  2. Weigh in cooked beetroot and frozen berries and crush on speed 8 for 10 seconds

  3. Scrape down the sides and weigh in 100 grams of double cream, mix speed 9 for 30 to 40 seconds.

  4. Serve immediately OR if it is a bit soft, freeze for about 30 minutes. 

Tip

You can use raw beetroot which makes the flavour a bit more earthy. This is really nice and creamy. The beetroot adds a lovely rich red colour. I started doing this to get vegetables into my son who is generally a veg free zone.

    tmrc_emoticons.)Really enjoyed it. Have never tried something sweet like this with beetroot in before. Will pass this on to my sister for her fussy vege son.

    She served up the Mexican Vegetable Stack and he thought it wa meat so you might like to try that one on your son if you haven't already!
